We've already told you that our family never does anything the way other people do. Kriek Lindemans is a good example of that.In order to obtain a beer like no other, we have been adding whole sour cherries to our lambic for generations.Our meeting with American importer Charles Finkel in the 1970s revolutionised the fruit beer segment. Charles convinced us to export our old kriek to the United States by boat. What we had not thought of is that the movement of the waves would reactivate the fermentation process and cause the corks to pop during the trip. It was like something out of The Adventures of Tintin. To prevent that from happening, we therefore developed an alternative production method for our kriek. We use fresh, not from concentrate, unsweetened cherry filtrate which we blend with lambic that is at least one year old before fermenting & macerating for up to 3 days and pasteurising the whole batch. So the corks don't pop.Due to the use of filtrate and pasteurisation, this kriek is sweeter and fruitier than Old Kriek Cuvée René, which undergoes a second fermentation process in the bottle. Thanks to its innovative flavour, it was a resounding success both here in Belgium as well as around the world. “Chushu” means “the end of heat” and is the solar team marking the end of summer and the beginning of autumn. Chinese called this period “Autumn Tiger” to describe the furious heat wave people often experience during this time.“Chushu” is not your typical boring tasteless lager. It is first hopped with Columbus, Cascade, and Mosaic, and then we patiently wait for the lager yeast to do their magic during the extended period of cold fermentation and lagering. The result is a clean, crisp and refreshing beer with citrus, tropical fruit aroma and flavors. Xiaoshu means “Minor Heat” marking the midway point of the summer, and that means we are only a few weeks away from the hottest time of the year – “Major Heat.”“Minor Heat” is the mellow cousin of our “Major Heat” Jasmine IPA, with lower ABV %, IBU and lighter body. Like his cousin, “Minor Heat” is full of grapefruit and tropical fruit flavors from American hops, accompanied with the distinct jasmine flavors from jasmine flowers grown in Changhua, Taiwan. “Bai-Dai” (means one hundred of generations) is our special collaboration project with the iconic Põhjala brewery from Estonia. It is a traditional Imperial Baltic Porter brewed with chocolate from Taiwan’s very own FuWan Chocolate and coffee beans from the award-winning Simple Kaffa cafe. The beer is then aged on French and American oak to create the complex layers of dark-roasted malt, cocoa, and coffee flavors. Unlike your mother in-law, this beer will definitely improve when properly aged. We've already told you that our family never does anything the way other people do. Kriek Lindemans is a good example of that.In order to obtain a beer like no other, we have been adding whole sour cherries to our lambic for generations.Our meeting with American importer Charles Finkel in the 1970s revolutionised the fruit beer segment. Charles convinced us to export our old kriek to the United States by boat. What we had not thought of is that the movement of the waves would reactivate the fermentation process and cause the corks to pop during the trip. It was like something out of The Adventures of Tintin. To prevent that from happening, we therefore developed an alternative production method for our kriek. We use fresh, not from concentrate, unsweetened cherry filtrate which we blend with lambic that is at least one year old before fermenting & macerating for up to 3 days and pasteurising the whole batch. So the corks don't pop.Due to the use of filtrate and pasteurisation, this kriek is sweeter and fruitier than Old Kriek Cuvée René, which undergoes a second fermentation process in the bottle. Thanks to its innovative flavour, it was a resounding success both here in Belgium as well as around the world.
